The University of Florida Institute of Food and Agricultural Sciences (UF/IFAS) is launching a new virtual program aimed at promoting healthier eating habits through Mediterranean cuisine. The initiative, titled “Cooking Up Health: The Mediterranean Way,” will take place on Fridays from March 6 to April 10, 2024, from noon to 1 p.m. Participants can join the six-week series for a fee of $15.
This educational program is designed to encourage sustainable food choices and practical dietary changes. Led by Jessica Alfonso-Rodriguez, a registered dietitian nutritionist with UF/IFAS Extension Miami-Dade County, the series will focus on seven essential steps for creating healthier meals. Participants will learn easy-to-follow recipes while gaining insights into nutrition science and everyday strategies for better eating.
Engaging Topics and Practical Learning
The program covers various topics, including mindful eating, meal planning, and understanding food labels. Participants will also explore the role of physical activity in maintaining a healthy lifestyle. Each session aims to empower individuals with knowledge that can transform their relationship with food.
As National Nutrition Month approaches in March, this series presents a timely opportunity for community members to learn how nutritious ingredients can enhance their health. The curriculum is based on the “Med Instead of Meds” initiative developed by the North Carolina State University Cooperative Extension, which emphasizes nutrient-dense foods and sustainable habits to mitigate chronic disease risk.
