Junkyard Brewing Launches Unique Lefse Beer for Holidays

UPDATE: In an exciting holiday twist, Junkyard Brewing in Moorhead has just announced a groundbreaking collaboration with Freddy’s Lefse from West Fargo to unveil a unique lefse-based beer. The new Lefse Pilsner, a Norwegian-style lager, is now available and promises to delight adventurous beer lovers this season.

This innovative brew is generating buzz among fans as it combines traditional lefse ingredients with the art of brewing. Aaron Juhnke, owner of Junkyard Brewing, reports that initial feedback has been overwhelmingly positive. “I’ve talked to some people who are 100 percent certain they can taste lefse in this beer,” Juhnke stated, highlighting the intriguing flavor profile of the pilsner.

The new beer debuted during a special pop-up event at Junkyard, where local enthusiasts gathered to sample the unique creation. Among the attendees were Katie and Bryan Nermoe, owners of Freddy’s Lefse, who played a key role in the collaboration. Katie Nermoe shared her enthusiasm, stating, “The beer is incredible. It exceeded my expectations.”

The creative process behind the Lefse Pilsner has been a journey into uncharted territory for the brewers. “The brewing process is just a process of converting starches to sugar,” explained Juhnke. “Potato starch should convert like other types of starches, like rice or corn.” This innovative approach has not only piqued curiosity but has also led to a successful rollout, with many attendees expressing their excitement for the unique flavor.

Event coordinator Lexi Ostenaa mentioned that social media and email blasts were vital in spreading the word about the pop-up event. Attendee Kelly Klocke from Fargo praised the Lefse Pilsner, declaring it a winner and even purchasing a package of lefse to enjoy for Thanksgiving.

Juhnke also revealed that the aesthetics of the beer cans have been carefully crafted, featuring a design inspired by the Scandinavian heritage of lefse, complete with elves holding beer steins, capturing the festive spirit perfectly.

As the holiday season approaches, this new beer is set to be available on tap at Junkyard locations in Moorhead and West Fargo, alongside retail distribution to liquor stores, including in the Twin Cities.
