Burger Dive Expands with New Location in Rosedale Center

Burger Dive is set to open a new location in Rosedale Center, transitioning from its previous spot at the Potluck Food Hall. This move allows the popular burger establishment, founded by Josh Thoma, Kevin Fitzgerald, and chef Nick O’Leary, to secure its own space, which will occupy areas formerly held by both Chipotle and Potbelly.

The new restaurant, scheduled to open on January 12, 2024, will feature a more extensive dining area, seating up to 180 guests. Located closer to the AMC Theaters, it will include an exterior entrance, enhancing accessibility for patrons. “We’ve had great success at Potluck for the last six years and are excited to offer even more at our new location,” Thoma stated in a news release. The larger footprint will enable the restaurant to introduce a broader menu, including breakfast options, and provide space for entertainment features such as karaoke and trivia nights.

The interior design will reflect the restaurant’s vibrant theme, featuring wood paneling and neon beer signs. Breakfast will be available daily until 17:00, with selections like omelettes, corned beef hash, country fried steak, and breakfast burritos. The full menu will be accessible starting at 08:00.

The area previously occupied by Burger Dive within Potluck will be retained by Smack Shack, which plans to expand its offerings with additional appetizers, sandwiches, chicken wings, mac and cheese, and gourmet hot dogs.

New operating hours for Burger Dive will be from 08:00 to 23:00 Sunday through Thursday, and from 08:00 until 00:00 on Friday and Saturday. This new site complements Burger Dive’s existing location on Randolph Avenue and Bay Street in St. Paul.
